Zucchini fritters with cheese and corn


  • 700 g of zucchini (3 medium or 2 large)
  • 2 eggs
  • 100 g of cheese
  • 150 g of canned corn
  • 3-4 tablespoons of flour (maybe more or less)
  • 2 cloves of garlic
  • salt, pepper to taste
  • greens
  • vegetable oil for frying

Grate the zucchini on a large grater and squeeze out excess liquid (we pour out the juice from the zucchini, we don’t need it).

Add eggs, salt, pepper and garlic to the dry mass. We mix.

Next, add hard cheese, greens and corn without liquid. Pour sifted flour and mix again. You can use more/less flour depending on how well you press the courgettes, I used 3 tbsp.

An important point – take cheese and corn that are tasty and of good quality, then the fritters will turn out

Fry the fritters on a slow/medium heat from each side until a golden crust. Then transfer to a paper towel.
